Mozzarella Chicken

I actually wasn't going to make this tonight, I was going to make something else. But lemme tell ya, I am SO glad I decided to go with this recipe. This was SO easy and SO good! This will definitely get made again and I will make this over and over again.

Ingredients:
1/2 c milk
1 c Italian-style bread crumbs
2-4 boneless, skinless chicken breasts
1 can tomato sauce
olive oil
parsley
basil
oregano
garlic salt
red pepper flakes (optional)
mozzarella cheese

Directions:
1. Dip chicken in milk. Less excess drip off.
2. Dredge in bread crumbs
3. Place on plate and refrigerate for 30 mins to set crust
4. Spray pan with non-stick cooking spray
5. Spread 1/3 of the tomato sauce over the bottom of the dish and set aside for later
6. Heat skillet over medium-heat. When hot, add oil and swirl to coat bottom of the pan
7. Brown each of the chicken breasts. Rotate until crispy or desired
8. Set chicken in sprayed pan atop the tomato sauce
9. Cover chicken with remaining sauce
10. Sprinkle with parsley, basil, oregano, garlic salt, and red pepper flakes as desired
11. Finish off with mozzarella cheese
12. Bake at 375 degrees for 15 to 20 mins or until cheese is slightly golden

Serve with pasta or eat as is.

Egg Patties

Yeah, I dunno what to name this recipe.

Ok, so here's the deal. I have to be to work by 8am every weekday. My alarm is typically set for 6:30, but realistically, I don't climb out of bed until 7:25, which leaves me with 20 mins to get ready. I don't have time to make a great meal to begin my day. So, when I came across this recipe, I was super excited because now, all I have to do is grab one, stick it in the microwave for 30 seconds, stick on some bread with a slice of cheese and be out the door.

Here's what you do: Spray a muffin pan with cooking spray so that your eggs don't stick. Crack in egg into however many wells you want. I seasoned mine with salt and pepper, but you don't have to. Bake it at 350 degrees for about 15 mins. I hate having a runny yoke, so I actually baked mine for 18 mins to ensure that they were "well done". Then store them in the fridge until ready to eat. Some people store their's in tubware, but I just threw mine into a ziplock bag and that seemed to store them well enough. You don't want to keep them longer than a week though because eggs, once cooked, do go bad after a few days.

Taco Wontons

I'm surprised I didn't do a post on this one already. I've made it maybe 5 times and love it because its so easy!

Ingredients:
ground beef
taco seasoning
wonton wrappers
cheese

Directions:
1. Brown the meet
2. Add the taco seasoning
3. Place wonton wrappers in cupcake tin
4. Add a spoonful of meet to each wrapper
5. Cover with cheese
6. Bake at 400 degrees for 8 mins

Pizza Pasta Casserole

Pretty simple. Pretty yummy. 

Ingredients:
1/2 lb ground beef
1 tsp garlic salt
1 tsp italian seasoning
2 tsp olive oil
1 jar pizza sause
8 oz of cooked pasta (I used radiator but you can use macaroni or rotini or whatever else)
2 cups mozzarella cheese 
Pepperoni 

Directions:
1. Brown beef
2. Add garlic salt, seasoning, and oil
3. Drain
4. Stir in pasta, pizza sauce, and 2 cups of cheese
5. Grease 9x13 inch pan and add mixture
6. Cover top with more cheese and add pepperoni
7. Bake at 350 degrees for 25-30 mins

Sweet Chicken Bacon Wraps

You can use this as an appetizer. I actually used it in place of a main course and it was just fine. I made this for a dinner I shared with 3 guys. Each one of them (and myself) LOVED these babies. It does take a bit of time to prepare, but it tastes super yummy and you'll get great reviews!


Ingredients:
4 boneless, skinless, chicken breasts
1 package of sliced bacon
2/3 cups brown sugar
2 tablespoon chili powder

Directions:
1. Preheat oven to 350 degrees
2. Cut chicken into about 1 inch cubes
3. Cut each bacon strip in half
4. Wrap bacon around chicken and secure with toothpick
5. In a bowl, mix together brown sugar and chili powder
6. Dredge wrapped chicken in mixture. Be sure to cover completely
7. Cover cookie sheet with tin foil and spray with cooking spray
8. Bake for 30-35 mins or until bacon is crisp

Cupcake/Muffin Pizzas

This took me like 5 mins to prepare. It took longer for the oven to heat up than it did to actually make these. These are simple, fun, and pretty yummy.

Ingredients:
Pillsbury pizza dough (or you can make your own)
Pizza sauce
Shredded cheese (I just used mozzarella)
Pepperoni (optional)
any other pizza toppings you want

Directions:
1. Preheat oven for 425 degrees
2. Grease cupcake/muffin tin
3. Separate dough equally enough to fit 2/3 of a muffin cup
4. Squish dough to cover sides of cups
5. Add sauce, cheese, and whatever other toppings you want
6. Bake for 10-15 mins. (I cooked mine for 12 mins and they were cooked all the way through.)

White Sauce Chicken Enchiladas

Ok, be prepared. These enchiladas will blow your mind! They are SO delicious!!! I found this recipe (via Pinterest) at Joyful Momma's Kitchen.

Ingredients:
10 soft tacos shells
2 c cooked, cubed chicken
2 c shredded monterey jack cheese
3 tbsp butter
3 tbsp flour
2 c chicken broth
1 c sour cream
4 oz (1 small can) diced green chillies

Directions:
1. Preheat over to 350 degrees. Grease a 9x13 pan
2. Roll chicken and cheese in tortillas
3. In sauce pan, melt butter and stir in flour. Cook for about a minute until thick.
4. Add broth; stir til thick and bubbly.
5. Turn heat down. Stir in sour cream and chillies. Do NOT boil or else your sour cream will curdle.
6. Pour over enchiladas and top with cheese.
7. Bake for 22 mins and then broil for 3 mins to brown the cheese.
